Raedwald cheese, pronounced 'Redwald' is a unique cheese produced by Fen Farm Dairy. 

It is inspired by the traditional French cheese Reblochon and is made using the rich, high cream milk from their Montbeliarde cows during the winter months.

It has a crunchy, toothsome rind and a smooth, oozing paste, with flavours reminiscent of Suffolk’s coastal woodlands — notes of salty bacon, hazelnuts, hidden fungi and mossy bark.

The young cheeses are washed in natural annatto, giving Rædwald its distinctive light bronze rind and a hint of sea-air character. It's then aged for several weeks to develop its ideal balance of creaminess and savoury depth.
